I made another homemade meal the other night. I’m on a roll.
(I did try my hand at ironing. It didn’t work out so well. I learned that you shouldn’t grab the iron by the flat part cause it’s a tad bit warm. I guess I’ll take this domestic thing one baby step at a time).
But I did find another one pot wonder meal on Pinterest and gave it a try. It was even better than the first and got rave reviews from the Kidlet. (And by the way, it took two pots because I’m an overachiever).
This recipe had no name so I dubbed it (very creatively):
Turkey Sweet Potato Stew

- Brown 1 lb of ground organic turkey with sea salt, pepper and garlic-infused olive oil, then added chopped zucchini and sweet potato. (How much?? I eyeballed it).
- A can of fire-roasted diced tomatoes and a little veggie broth (eyeballed it again)
- Spices (1/2 t smoked paprika, 1/2 t chili powder, salt and pepper)
- Let it simmer, covered, for about 30 minutes before stirring in some black beans.
Move it, Martha Stewart. There’s a new chick in town.
